The restaurant's "farmers, butchers, fishers (sic)" tagline is based on the farm-to-table

dining concept. This means that, as far as possible, the restaurant will source its meat

directly from artisanal farmers, butchers and fishermen who are focused on quality,

rather than an industrial production aimed at feeding the masses. On the restaurant's

name, the number 81 is the country code of Japan, so there's the link.

Nestled next to the lobby of the Berjaya Hotel sits this understated restaurant which

embodies the concept of “fusion farm to table”. Think Modern European cooking

techniques married with Japanese accents that both surprise and delight the senses.

The emphasis on using the freshest ingredients and prepared in its purest form allows

the quality of the ingredients to shine through.

For the first time ever, this famous Ozaki Wagyu will be available outside of Japan, and

they’ve found a home here in Singapore, exclusively at 81 Duxton.
